If you’re wanting something sweet and simple, this one bowl vegan vanilla cake recipe is just the thing! It’s a fuss-free dessert that requires minimal effort, making it perfect for a quick treat or a special occasion.


Homemade Vanilla Cake For Any Occasion

The examples I have in the post today are for Halloween, but it can be used for any occasion. To show you just how versatile this recipe is I have photos of it as cupcakes and a round pan layer cake. The recipe suits any cake pan you can throw at it.

Plus, the ingredients are basic – plant-based milk, a bit of oil, and a splash of vanilla – items you likely already have in your pantry. This versatile recipe works as a whole cake or as cupcakes, offering flexibility depending on what you’re in the mood for.

One Bowl Vegan Vanilla Cake Recipe


Ingredients


Dry


  • 1 ½ cups all-purpose flour

  • ¾ cup raw sugar (reduced)

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt


Wet

  • 1 ¼ cups plant-based milk (I use barista oat)

  • ⅓ cup vegetable oil

  • 1 tablespoon apple cider vinegar

  • 2 teaspoons vanilla extract


Method


  1. Preheat the oven to 170°C (340°F). Grease your cake tray or line your cupcake tray.

  2. Mix the dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a large bowl.

  3. Add the wet ingredients (coconut milk, oil, vinegar, vanilla) and stir until smooth.

  4. Distribute the batter into the cupcake liners and bake for 18-22 minutes. Test that the batter is cooked with a skewer or toothpick inserted. If it comes out clean it is ready.

Vanilla Buttercream Frosting


You can make vanilla frosting using the recipe below. This is ideal for adding food colouring.



Ingredients


  • 1/2 cup vegan butter (softened)

  • 3 cups powdered sugar

  • 2-3 tbsp plant-based milk (such as almond, soy, or oat)

  • 1 1/2 tsp vanilla extract

Thick purple frosting

Instructions


  1. In a large mixing bowl, beat the softened vegan butter until creamy and smooth.


  2. Sift in the powdered sugar and mix on low speed until combined.


  3. Add the vanilla extract and 2 tablespoons of plant-based milk. Mix on medium speed until the frosting is smooth and fluffy. If the frosting is too thick, add an additional tablespoon of plant-based milk, a little at a time, until you reach the desired consistency.


  4. Once the frosting is smooth and spreadable, it’s ready to use. Spread it onto your cooled cupcakes using a knife or piping bag.
