Fall Arugula Pear Salad Recipe With Walnuts


Ingredients


  • 4 cups arugula (or your favourite leafy greens)

  • 2 ripe pears, thinly sliced

  • 1/4 cup walnuts

  • 1/4 cup dried cranberries

  • 1/4 cup vegan feta or crumbled tofu (optional)

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon tahini

  • 1 teaspoon maple syrup

  • 1/2 teaspoon Dijon mustard

  • 1 tablespoon of water (optional for a thinner dressing)


Instructions


  1. Prepare the Salad: In a large salad bowl, combine the greens, sliced pears, toasted walnuts and dried cranberries. If using, sprinkle the vegan feta or crumbled tofu on top.


  2. Make the Dressing: In a small bowl, whisk together the apple cider vinegar, tahini, maple syrup, Dijon mustard, salt, and pepper until smooth and well combined.


  3. Toss the Salad: Pour the dressing over the salad and gently toss until all the ingredients are evenly coated.
