Pomegranate Glazed Tofu

Ingredients


  • ½ cup pomegranate juice

  • 2 tablespoons soy sauce or tamari

  • 1 tablespoon maple syrup or agave syrup

  • 1 tablespoon cornstarch

  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • 1 teaspoon fresh ginger, minced

  • 1 teaspoon sesame oil (optional for extra flavour)


  • 1 block of firm tofu, pressed and cubed


Instructions


  1. Prepare the Tofu


    • Start by pressing the tofu to remove excess moisture. You can do this by placing the tofu block between two plates and putting a heavy object on top for about 15-20 minutes.

    • Once pressed, cut the tofu into bite-sized cubes.


  2. Make the Pomegranate Glaze


    • In a small bowl, whisk together the pomegranate juice, soy sauce, maple syrup, cornstarch, minced garlic, and minced ginger until the cornstarch is fully dissolved. This will be your glaze.


  3. Cook the Tofu


    • Heat the olive oil in a large, non-stick skillet or pan over medium heat.

    • Add the tofu cubes to the pan and cook for 5-7 minutes, turning occasionally, until the tofu is golden brown and crispy on all sides.


  4. Add the Glaze


    • Once the tofu is golden, pour the pomegranate glaze into the pan.

    • Stir the tofu gently to coat it evenly in the glaze.

    • Cook for an additional 2-3 minutes or until the glaze has thickened and is well-coated on the tofu.


  5. Finish and Serve


    • If using, drizzle the sesame oil over the tofu for extra flavour.

    • Remove the tofu from the pan and serve immediately.
