  • 1 kg (about 2 pounds) carrots, peeled and cut into sticks or left whole if small

  • 2 tablespoons maple syrup

  • 2 tablespoons olive oil (optional, switch to water)

  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

  • 2 cloves garlic, minced

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 1 tablespoon balsamic vinegar (optional, for extra depth of flavour)

  • Fresh parsley, chopped, for garnish (optional)


Instructions


  1. Preheat the Oven: Preheat your oven to 200°C (400°F).


  2. Prepare the Carrots: If the carrots are large, peel them and cut them into sticks. If they are small, you can leave them whole. Place the carrots in a large mixing bowl.


  3. Make the Maple Glaze: In a small bowl, whisk together the maple syrup, olive oil (or water), thyme, minced garlic, salt, and pepper. If you're using balsamic vinegar, add it to the glaze mixture.
